Alberty's Famous Hot Meat Sandwich

4 lbs. good ground beef
2 med. potatoes, diced
2 med. onions, chopped
1/3 brick chili
1 can (#3) tomatoes
1/2 teaspoon sweet pepper
1/8 teaspoon curry powder
1 teaspoon black pepper
1 tablespoon salt
2 tablespoons butter
1 cup diced cheese

Mix all of the above , excluding cheese; mash with potato masher many times while cooking.
At the end slowly add the cheese and chili, 30 min. before serving

Tulsa Public School Been Chowder
(this came from my grandmother who was the cafeteria manager at Porter Elem. School.)

2 1/2 lbs. coarse ground beef
3 tablespoons chili powder
2 1/2 lbs. pinto beans
5 tablespoons salt
4 oz. chopped onion
4 oz. shortening
1 qt. tomato puree
2 1/2 tablespoons sugar
1/2 lb. ground suet
1/4 oz. garlic

Cook beans in 7 quarts or more water and when nearly done add chili powder (2 Tbls)
and salt (1 Tbs). Drain beans reserving 3 quarts liquid and thicken with flour, mixed with
cold water. While beans are cooking combine beef, suet, chili powder (1Tbs ), salt
( 1 1/2 Tbs.) onion, garlic, and sugar. Melt shortening and add meat mixture. Brown the meat in a 350 oven. Stir frequently until meat is done. Add tomato puree and simmer 15 minutes. Combine the meat mixture, bean mixture and all thickened liquids. Heat and serve.
