Alberty's Famous Hot Meat Sandwich
4 lbs. good ground beef 2 med. potatoes, diced 2 med. onions, chopped 1/3 brick chili 1 can (#3) tomatoes 1/2 teaspoon sweet pepper 1/8 teaspoon curry powder 1 teaspoon black pepper 1 tablespoon salt 2 tablespoons butter 1 cup diced cheese Mix all of the above , excluding cheese; mash with potato masher many times while cooking. At the end slowly add the cheese and chili, 30 min. before serving |

3 tablespoons chili powder 2 1/2 lbs. pinto beans 5 tablespoons salt 4 oz. chopped onion 4 oz. shortening 1 qt. tomato puree 2 1/2 tablespoons sugar 1/2 lb. ground suet 1/4 oz. garlic Cook beans in 7 quarts or more water and when nearly done add chili powder (2 Tbls) and salt (1 Tbs). Drain beans reserving 3 quarts liquid and thicken with flour, mixed with cold water. While beans are cooking combine beef, suet, chili powder (1Tbs ), salt ( 1 1/2 Tbs.) onion, garlic, and sugar. Melt shortening and add meat mixture. Brown the meat in a 350 oven. Stir frequently until meat is done. Add tomato puree and simmer 15 minutes. Combine the meat mixture, bean mixture and all thickened liquids. Heat and serve. |
